Oh hey there,
So kinda weird but ALL I wanted this week was vegetables like 24/7 to keep me going. I know, SO weird but I don’t really do coffee or anything like that because I believe that a healthy diet and other healthy alternatives really contribute to your energy level (but that’s a whole other convo). I think I ate so much green stuff this week I should’ve turned the Hulk’s color.
Anyways….
I’m sharing with you all a quick sautéed veggie recipe that won’t take up your whole evening cooking.
Preparation
- Cut up half an onion
- Thyme
- Pepper
- Salt
- Olive oil (or any oil you choose)
Cooking
- Cook the onions half way
- Add in the frozen vegetables
- Sprinkle thyme, pepper, and a LITTLE bit of salt
- Cook on high so the veggies get a little browned
- Lower the heat and add in a little water (or as much as you want) and let it simmer so all the flavors seep into the veggies
- Turn off heat and you’re all done!
Eating
Put it on top of some rice with sauce or just eat it as a side. Either way you do it you have a great vegetable dish that didn’t take up a ton of time and has a ton of flavor!
Hope you all enjoyed this quick and healthy recipe. If you try it out let me know what you think in the comments section below.
